Grown high in the Andes of South America, and known as the "gold of the Incas", quinoa dates back three to four thousand years ago when the Incas used it for increasing the stamina of Inca warriors. This super grain is a complete protein containing all nine essential amino acids and contains almost twice as much fiber as most other grains. The antioxidant flavonoids quercetin and kaempferol are also especially plentiful in quinoa. In fact, the concentration of these two flavonoids in quinoa can sometimes be greater than their concentration of high-flavonoid berries like cranberry or lingonberry.
